Juan Puerta is a food science engineer and innovative Colombian coffee producer behind Sens Coffee. At Finca La Sirena in Quindío, Juan combines his background in food science with coffee production to explore new approaches to fermentation and flavor development.

His work focuses on transforming the familiar Castillo variety through carefully controlled processing. Rather than relying only on traditional fermentation, Juan experiments with fruits, florals, and other natural ingredients to create expressive and distinctive coffees while maintaining the identity of the coffee itself.
