Ebin Castillo is a smallholder coffee producer from Erandique, in the mountainous region of Lempira, Honduras. His connection to coffee began at an early age, growing up in a family of farmers who cultivated a few coffee trees for their own use. What started as a family tradition gradually became his passion and livelihood. Today, Ebin dedicates himself to producing high-quality coffee while serving as a local leader of the Honduran Coffee Producers’ Association (AproCafé). For him, coffee is more than a crop; it represents his family’s heritage, years of dedication, and the opportunity to build a better future for the next generation.

Finca El Matazano is a four-hectare farm nestled in the highlands of Erandique, Lempira, at approximately 1,600 meters above sea level. Surrounded by shade trees and diverse vegetation, the farm reflects Ebin’s thoughtful approach to agriculture, where coffee is cultivated alongside other crops that support his family. During harvest, ripe cherries are carefully selected and processed in small batches using traditional washed methods. After depulping, the coffee undergoes overnight fermentation before being washed and naturally dried under the sun on patios. This careful approach produces a beautifully clean and balanced coffee, highlighting its natural sweetness and delicate complexity.
