Only fully ripe cherries are hand-harvested to ensure uniform quality. After picking, the cherries are floated to remove underdeveloped beans and then left to oxidize in the hopper for 12 hours.

Next, the cherries are pulped and combined with freshly harvested coffee before undergoing 36 hours of dry aerobic fermentation, with frequent stirring to prevent overheating and promote even development.

Don Daimer is a third-generation coffee grower whose family has faced and overcome adversity. After losing his grandfather to violence at a young age, his father continued thecoffee legacy, gradually expanding their land and cultivating the family passion for coffee.

Inspired by his father’s dedication, Daimer planted his first 80 coffee trees at the age of 12. From that moment, he was motivated to pursue a life in coffee production. After completing his studies, he continued working closely with his father, learning the craft and managing his own crops.

Twelve years ago, the growing recognition of quality coffees and fairer market prices inspired Daimer to deepen his knowledge and refine his methods. Today, his entire farm produces high-quality, specialty coffees, a testament to his dedication, curiosity, and commitment to excellence.
