This coffee is produced by Biru Bekele in the Sama area of Sidama, where high elevations and a cool climate allow the cherries to mature slowly, developing natural sweetness and balance.Farms are small and carefully managed, with coffee grown under native shade and cultivated using traditional, low-intervention practices. Cherries are selectively handpicked at peak ripeness, reflecting a focus on quality at every stage of production.The coffee is processed using the natural (dry) method, with whole cherries dried on raised beds for 16–19 days. This extended drying time allows the fruit to gently concentrate around the seed, contributing to a soft, layered sweetness and subtle fruit expression. After milling, the coffee undergoes the Swiss Water Process, a chemical-free method that removes caffeine using water and carbon filtration while preserving the coffee’s inherent character.
